Dried Fruits

Dried fruits are those fruits that have had all of the water content removed from them. You may recognize some of the more common ones as raisins, prunes, figs, dates, and apricots.

During the water removal process, the fruit shrinks. What is left is a dense, energy-packed snack. Dried fruits last longer than fresh fruits and can be a great quick snack for long trips when refrigeration is not available. Dried fruits are highly nutritious and loaded with fiber, vitamins, and minerals. Just a single serving can provide most of the daily recommended intake of vitamins and minerals. However, vitamin C content in fruit declines when the fruit is dried.

Dried fruit can be used for many things including:

• Fruit cakes, but choose natural dried fruits over candied or sugared dried fruits
• Snack foods like dried apples and bananas
• Dried prunes can be used as a laxative
• Can be used in smoothies or other drinks instead of fresh fruit
• Dried fruits make excellent pie fillings instead of fresh fruits
• Can be used in savory dishes like pan-fried brussels sprouts with bacon and cranberries, brisket with dried figs, and salads that include beets and prunes
