Freeze-dried fruit is a delicious snack or meal mix-in - but what is it, really?
First, suppliers select high-quality, fresh, flavorful fruit for freeze-drying. The fruit is then sliced or diced into small pieces and frozen. After freezing, the fruit undergoes a specialized procedure, during which the frozen crystals evaporate from the fruit. Freeze drying is different from dehydrating because freeze-drying removes more liquid. Dehydrated fruit may still have some water remaining, resulting in a chewy, leathery texture. Freeze-dried fruit, on the other hand, has almost no moisture. This low water content creates a pleasantly crisp product.
