Kombucha is a fermented drink that is made from tea. It is infused with bacteria, yeast, and sugar. During the fermentation process, the yeast and bacteria eat the sugar and grow into what is called a SCOBY — a Symbiotic Colony Of Bacteria and Yeast.
The kombucha will be ready to drink after only a few days to a month, depending on the taste preferences of the person brewing it. Even though the SCOBY looks highly unappetizing and rubbery, the drink that it makes is loaded with beneficial bacteria that is packed with health benefits. Kombucha can also be flavored with all kinds of different fruits for an extra kick.
