Description
First, let’s talk names. Pimento, pimiento, and cherry pepper have all been used for this vibrant red, heart-shaped chili pepper. These sweet peppers have a Scoville heat rating of less than 500, so they’re safe for heat-sensitive eaters.
Pimiento peppers average 1 ½ inches across and 3-4 inches long. The flesh of a pimiento pepper is sweet and succulent, and it boasts a stronger aroma than its cousin the bell pepper. Unlike the more traditional bell pepper, pimiento peppers’ taste is not watered down by a large size. Instead, the cherry chilis offer a more concentrated flavor experience.

Application and Uses

Pimiento peppers are traditionally used to stuff green olives and are used in the creation of pimento cheese. However, they are extremely versatile in your kitchen and can replace any instance of bell peppers in your recipes.
Pimientos can be roasted or pickled or pureed. You can de-stem and de-seed them before storing them in your freezer as an ingredient for soups, stews, or stuffing. You can eat them sliced, diced, or whole— whatever your fancy.
