Coconut has many uses in baking, from offering a dairy-free alternative to milk and whipping cream to being an actual ingredient. Because coconut is not very shelf stable on its own, chefs and bakers can purchase shredded and desiccated coconut to store until called for.
So just what is desiccated coconut? Suppliers take the rich, nutrient-dense flesh of a coconut, remove most of the moisture, and then grate it into small flakes. The resulting shelf stable pile of goodness can be used to mix into our recipes, top our oatmeal, or journey straight to our mouths in a pinch of goodness.
